Chicken and Broccoli Stir-Fry

Hello Darlings,

I apologize for the long absence; unfortunately I have not been up to anything exciting that would inspire a post. No outfits, no exciting plans, nothing. With each day, I find myself more and more bored and am counting down the days until vacation and then finally school! I just want to be with my friends and actually look forward to weekends instead of dreading going to work.
Ps. Working weekends sucks, it kills anything social in life!

So with that being said, I thought I might post a recipe that I had for dinner the other night. While I didn't exactly cook it myself (my sister wanted to make it so she "fired" me as her su chef.) Therefore I must give credit where credit is due and have a disclaimer that this dinner was all hers =) I'll make dinner another night!

Ingredients:
  • Vegatable Oil
  • 2lbs of boneless Chicken Cutlet
  • Chicken Stock
  • Scallions
  • Broccoli
  • Ginger
  • Soy Sauce
  • Orange Marmalade




Bring about a half a pot up to a boil for broccoli; bring skillet to extremely hot with vegatable oil.Thinly slice 2lbs of chicken and season with pepper and a pinch of salt. Add salt into the pot of boiling water and drop in broccoli; drain water from broccoli when broccoli is cooked. Add chicken stock and a drizzle of oil into the water add rice; drain water from rice when taste of the rice is as desired. Place rice in a bowl and add chopped scallions. In a sauce pan, add oil, a few inches of grated ginger, a couple of cloves of garlic and stir. Add 1/3 cup of soy sauce and 1/2 cup of orange marmalade. Bring to a boil and add chicken and broccoli; stir. Place desired amount of chicken and broccoli stir-fry onto plate and add a side of rice.
